Since living in California part time, I have learned that many food courts in CA (such as those in a mall) support recycling and composting. Rather than throwing out all our trash (including paper, plastic, bottles) all in the same receptacle, food courts in CA have multiple receptacles for different recyclable materials. If you leave your tray on the table, I have even seen the cleaning staff sort out the trash accordingly. In contrast, I have never seen such a set up in Massachusetts.
Domain: Science - Ecology, Recycling
Curriculum ideas: Different recyclable categories (Glass, Plastic, Paper); have students sort out materials used in the classroom for a month's time and measure how much of each was used over the month.

(That's why I love California!)
